End of Summer Birthday Dinner Menu

We celebrated my mom’s birthday on Saturday and we had so much fun! We ate (a lot), looked at old pictures and videos, went for a walk, and played cards. It was such a nice day! She always requests the same meal every year which is basically what she orders at the Bristol (her favorite restaurant). We added mac and cheese to the menu because I’m a child (as Nick would say) and won’t eat salmon–sorry! I was also so excited to get to use my fish tea towel that I bought in Positano, Italy when we visited last summer!

Mac and cheese – Beecher’s (using the actual Beecher’s cheese from Costco!): I, myself,  like a lot of flavor so I had to double or maybe even quadruple the spices that it called for but it turned out so good!

Biscuits – I’m still in search for the perfect biscuit but this one is pretty darn good! Totally forgot to do the freezing step before baking but they still turned out well. Next time, i’ll be adding some melted butter to the top!

Blackberry pie bars – After a friend sent me this recipe 5+ years ago, this (and the Pioneer Woman’s texas sheet cake) are ALL my mom requests for her birthday!

Blackberry Pie Bars

Raspberry crumble bars – these are amazing. And, since my sister is due to have her baby any day now and specifically requested these, I made two desserts!

Raspberry Crumble Bars



  • 1 pound asparagus
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 3 garlic cloves, minced
  • 3 tablespoons Parmesan
  • Salt and pepper


  1. Preheat oven to 400 degrees. Toss asparagus in olive oil, lemon, garlic, Parmesan, and salt and pepper.
  2. Roast for 8-10 minutes or until the asparagus is crisp.



  • 2 tablespoons of honey
  • 2 tablespoons olive oil
  • 1 tablespoon of lemon
  • 3 garlic cloves, minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 6 salmon fillets


  1. Mix ingredients together and marinade with salmon in a plastic bag for at least 30 minutes.
  2. Place salmon on baking sheet. Drizzle the remaining marinade over the salmon.  Cook for 10 minutes at 400 degrees.
