Happy weekend, friends! It’s finalllllly Friday. This is my first full week of work in awhile and it definitely dragged on. My weekend plans are pretty low key (which I’m pretty pumped about!)–dinner with gal pals, workouts, catching up on tv shows (hello, Real Housewives of NYC & Very Cavalari), and pool time!
Since I’ve been back from Santa Barbara I’ve been in the cooking mood…and not the healthy type of cooking. So clearly, Mexican has been by go-to. I made these avocado spicy chicken tacos last week and they were SO good. And then on Sunday, we had Nick’s family over for dinner and they all love Mexican so we had a legit fiesta! Chicken Fajita Marinade – I used this recipe and marinated the chicken and veggies (red pepper, yellow pepper, orange pepper, red onion, white onion) separately. Top with cheese, greek yogurt, avocado, cheese, cilantro, & salsa!
Salsa (seriously the best) – drain the tomatoes and don’t over blend! I also leave the jalapeno seeds to add some heat! Eat it with the Tostitos Cantina Chips and you really feel like you’re at a restaurant!
Mexicorn – I love anything and everything with corn in it so clearly this recipe had my name ALL over it!
Margs – I didn’t have a lot of ingredients (or time, really!) so I kept them very simple: 1 shot tequila, 1/2 shot triple sec, 1/2 of a lime juiced, lots of ice, topped with ginger ale (b/c I was out of sprite but both work!)
