And, boy, am I glad that it is almost the weekend! As I’ve gotten older I always say, the days are long but the weeks and months fly. And this week’s days were long!
I wanted to share this recipe before Valentine’s Day because these cookies would make the perfect V-day dessert! Although I make these cookies year round because once you try them, you’ll want them all the time! Nick and I haven’t decided what we are doing for Valentine’s yet (or if he’ll even be in town…) but I’m assuming it will involve a large pizza and bottle of wine either way! 🙂
These cookies come together very quickly and I have never made them and not been asked for the recipe…so clearly they’re good!
Red Velvet Gooey Cookies
Yield – 24 cookies
Ingredients –
*1 box Red Velvet cake mix (I used Duncan Hines)
*½ cup butter (1 stick), softened
*1 package (8 oz) cream cheese
*1 egg
*1 tsp vanilla extract
*¾ cup white chocolate chips
*¾ cup powdered sugar for rolling/topping
Directions –
- Preheat oven to 350 degrees
- Cream butter and cream cheese together until well-blended
- Add egg and vanilla and mix until combined
- Mix in red velvet cake mix (sticky dough will form at this point)
- Fold in white chocolate chips
- Using a cookie scoop or spoon, scoop and roll dough into 1 inch balls
- Coat cookie dough in powdered sugar (I make sure the whole cookie is covered in powdered sugar)
- Bake for 8-9 minutes
- Let cool for 10 minutes and sprinkle with powdered sugar
